For more than 10 years, the estate has undergone significant restructuring and is actively developing with a concern for excellence and environmental respect.

The construction of a low-energy cellar ensures a constant temperature throughout the year within the operation and an economy  energy  considerable.

THE CUVERIE
STAINLESS STEEL & GRAVITY TANKS

In recent years, the vat room has been modernized and accommodates new thermoregulated stainless steel vats. These tanks  allow  the  maintenance  rigorous hygiene as well as temperature regulation, a crucial parameter for the good progress of fermentation but also for the preservation of the aromatic profile of the grape varieties.

A part of the  vat room is installed at a lower level, allowing the vats to be filled by gravity. This system allows  preserve the freshly obtained juices after pumping back from the harvest, which can be stressful for the future wine.

KNOW-HOW & TECHNOLOGY

In parallel with  manual harvest, the grape harvester has the latest generation ensures rapid and efficient harvest while preserving the quality of berries and trellising.

 

The pressing of the grapes is a key step in the production of wines. Pneumatic presses work with a membrane inflated with air exerting pressure on the grapes. The juice extracted by pneumatic presses is thus clearer because it is less stirred than with other pressing systems.

The tangential filter has the advantage of clarifying the wine and making it bright and microbiologically stable, in a single pass. This system offers reduced wine brewing, automated use and thus improved productivity.
